The K-State Research and Extension Master Food Volunteers who tested this recipe had this to say: "This recipe is colorful and nutritious. The combination of ingredients works well to have an enjoyable and delicious veggie side dish. The crispiness of the snow peas is yummy! Also, it was a fairly easy and quick recipe, which is always a bonus."
- 1csesame seeds
- 1Tsesame (or olive) oil
- 1clvgarlic, minced
- 1csnow peas, sliced into bite-size pieces on the diagonal
Toast the sesame seeds in a dry skillet over medium heat, shaking the pan often, until golden brown. Set aside.
Add oil to skillet, adjusting heat to medium-high. Add garlic and onions and stir-fry for about 1 minute. Add carrots and stir-fry about 1-2 more minutes, or until carrots are nearly crisp-tender. Add snow peas and stir-fry 1-2 more minutes until peas are bright green. (If vegetables start to stick, add a bit of water or broth to moisten.)
Salt to taste or add a little soy sauce. Serve over brown rice or quinoa. Sprinkle with the toasted sesame seeds.
