Raspberry Vinaigrette

Description

A not too sweet vinaigrette with a dash of Dijon.
This is a great recipe in which to use locally made preserves purchased at the farmers market.

Ingredients

  • 1⁄3
    c
    raspberry preserves
  • 1⁄4
    c
    canola oil
  • 4
    t
    rice vinegar
  • 4
    t
    cider vinegar
  • 1
    T
    dry white wine
  • 1
    t
    dijon mustard

Instructions

Place preserves in medium bowl; gradually whisk in oil. Stir in remaining ingredients.
Season to taste with salt and pepper.

Notes

Tip: For those times when you don't quite finish a bottle of wine, pour the wine into ice cube trays and freeze. When cubes are frozen, pop them out and place in a zip top baggy or other airtight container.
