Description
Colorful cherry tomatoes star in this refreshing summer salad. Great as a first course, Panzanella can be a meal in itself.
Ingredients
- 7cday old italian bread
- 1 1⁄2lbmixed cherry tomatoes, halved
- 1tomato, large dice-preferably a juicy heirloom
- 1⁄2cred onion, thinly sliced
- 2cucumbers, large dice
- 1cbasil, torn into large pieces
- 1cmozzarella, 3/4" dice
- 1⁄2cgreek olives, pitted and halved
Instructions
Combine half of the vinaigrette with all of the bread, and set aside to marinate for about 10 minutes.
When bread has marinated, add remaining vinaigrette and all other ingredients. Add salt and freshly ground black pepper to taste. Using clean hands, mix until well incorporated.
Let salad rest for 15-60 minutes to let flavors meld.
Serve at room temperature.
Tip: For improved flavor and texture, cut bread into 1" slices and grill before cubing.
Notes
Lemon-Garlic Vinaigrette
1/2 c. freshly squeezed lemon juice
1 1/2 c. extra-virgin olive oil
1/2 T. lemon zest
3 medium garlic cloves, thinly sliced
Place lemon juice in a non-reactive bowl. Whisking continuously, add olive oil in a thin stream until well blended. Add lemon zest, garlic and season with salt and freshly ground pepper.
