Description
An Emporia Farmers Market favorite!
Ingredients
- 3 1⁄2cpeeled whole tomatoes and juice
- 1⁄4cdried onions
- 2Tchopped parsley
- 2tsugar
- 1tcumin
- 1⁄2tsea salt
- 1⁄4tblack peppers
- 1⁄4cbutter
- 1⁄4cflour
- 1 1⁄2cundiluted evaporated milk
- 1cwater
Instructions
Cut up the tomatoes and combine with juices, onion, parsley, sugar, cumin, salt and pepper in a medium bowl.
Melt butter in a large saucepan. stir in flour until well blended.
Gradually stir in evaporated milk and water.
Cook over medium heat, stirring constantly, until mixture just comes to a boil.
Stir in tomato mixture and heat just to serving temperature.
Notes
Can be made from fresh or canned tomatoes. Home canned, homegrown tomatoes work perfectly to make this a year-round soup! This soup always sells out at our Soup Extravaganzas and was a HUGE hit at The Taste.
