Description
Tired of the same mashed potatoes all the time. Give this a try and spice up your meal.
Ingredients
- 3medium potatoes
- 1medium onion
- 2green chilies; deseeded and finely chopped
- 1ttamarind
- 1tblack mustard seeds
- 1⁄4tfenugreek seeds
- 1tcoriander seeds
- 1tsalt
- 1tturmeric
Instructions
Peel potatoes and boil in salted water until soft. Mash without adding liquid. Infuse the tamarind in 3 tablespoons boiling water for 5 minutes. Strain Liquid and put aside. Heat 1 tablespoon oil in a pan and add the black mustard seeds. Cook until they pop and add fenugreed seeds, coriander seeds, and cook until slightly browned. Add onion, green chilies and turmeric, and fry until soft and brown. Pour in the tamarind-infused water and simmer for 5 minutes. Stir in the mashed potatoes and add salt to taste. Cover pan and cook gently for an additional 5 minutes. Serve hot.
