Description

Tired of the same mashed potatoes all the time. Give this a try and spice up your meal.

Ingredients

  • 3
     
    medium potatoes
  • 1
     
    medium onion
  • 2
     
    green chilies; deseeded and finely chopped
  • 1
    t
    tamarind
  • 1
    t
    black mustard seeds
  • 1⁄4
    t
    fenugreek seeds
  • 1
    t
    coriander seeds
  • 1
    t
    salt
  • 1
    t
    turmeric

Instructions

Peel potatoes and boil in salted water until soft.
Mash without adding liquid.
Infuse the tamarind in 3 tablespoons boiling water for 5 minutes. Strain Liquid and put aside.
Heat 1 tablespoon oil in a pan and add the black mustard seeds.
Cook until they pop and add fenugreed seeds, coriander seeds, and cook until slightly browned.
Add onion, green chilies and turmeric, and fry until soft and brown.
Pour in the tamarind-infused water and simmer for 5 minutes.
Stir in the mashed potatoes and add salt to taste. C
over pan and cook gently for an additional 5 minutes.
Serve hot.
