Description

Try this simple recipe with a variety of different fruits.
Great on crackers, bagels, toast. Add more fruit or a little milk to thin it and use as a fruit dip.

Ingredients

    c
    raw fruit
  • 1⁄4
    c
    honey
  • 1
    ds
    spice such as cinnamon, nutmeg, mace, cardamom, allspice, cloves (optional)
  • 1⁄4
    t
    orange or lemon zest (optional)
  • 1
    pk
    cream cheese or neufchatel

Instructions

Cook fruit with a little bit of water until soft.
While fruit is cooking, bring cream cheese to room temperature, then whip at high speed until fluffy.
Press the cooked fruit through a food mill or strainer (or puree in a blender or food processor - whatever floats your boat).
Mix in honey, spice and citrus zest.
Gently blend the fruit mixture into the whipped cheese, gradully increase speed to whip the two together.

Short cut: Use 1 cup jam or preserves instead of starting with raw fruit.

Notes

The version that 270 or so people sampled at "The Taste" in Emporia on 4/24/10 used rhubarb, gooseberries and blueberries for the fruit, cardamom for the spice and orange zest. All three fruits and the honey were locally-sourced, of course.
Different fruit and spice combinations will give you different (and exciting) flavors! Have fun experimenting!!!
