Description

Tracey Graham, former manager of the Emporia Farmers Market, shared this recipe as a way to capture the delicious, summer cantaloupe bounty into the winter.

Ingredients

  •  
     
    cantaloupe

Instructions

Slice Cantaloupe 3/8" thick. 
Use a small start-shaped cookie cutter to cut stars. 
Dry in dehydrator on "fruit" setting (~130o) until mostly dry, but still flexible. 
Seal in canning jars or airtight bags. 

Notes

Tracey says that you can dry chunks of any shape, but the stars are so pretty she likes them best. 
Tracey uses the rest of the cantaloupe to make a fresh fruit salad. 
She says this method also works well with watermelon, but cut the watermelon slices 1/2" thick.
