Cantaloupe Granita

Description

Our favorite kind of recipe. low effort and high reward.
Granita is an easy and tasty summertime treat that doesn't require any special equipment.
The key to a fabulous granita is selecting fruit at its peak of flavor and sweetness.

Ingredients

  • 2
    c
    coarsely chopped cantaloupe, 1/2 melon
  • 1⁄4
    c
    sugar, or to taste
  • 1⁄2
    T
    fresh lemon juice, or to taste
  • 1
    c
    ice cubes

Instructions

Purée all ingredients in a blender until smooth.

Pour mixture into 13 x 9 in. baking pan and place in freezer.

Every twenty minutes, take the pan out and scrape the frozen mixture with a fork until all the frozen pieces are broken into small shavings and mixed well with the remaining liquid. Continue to freeze.

Scrape every twenty minutes until no more liquid is in the granita.
